Our fresh pasta is made in the most traditional way using high quality durum wheat semolina and fresh eggs. We pretty much make it as you would at home. We take the semolina, add eggs and water, mix it well until we have a lovely soft dough, knead it over and over, then roll it and roll it again. Hey Presto! A lovely sheet of pasta ready to use for making shapes to fill or to simply cut into tagliatelle or other long noodles. We just use extra large mixers and huge rollers so we can make lots of pasta!
