Q: What are the differences between fresh and dry pasta
Answer
Fresh pasta is simply pasteurised (like milk) to make it last longer. Because of this short gentle process fresh pasta retains the nutritional benefits, the full flavour and the natural colours of its ingredients.
Dry pasta, however, uses a much longer process to enable it to last even longer on the shelf. As a result of this process it does not retain all the freshness of its ingredients.
Fresh pasta offers a much wider choice of flavours and fillings e.g. Tagliatelle Garlic and Herb, Tortelloni Spinach & Ricotta, Mushroom Ravioli. Look at our full range of Fresh Pasta products

Fresh pasta is healthy. Unfilled pasta contains approximately 2.5g fat per serving and filled pasta varies from 3g to 10g fat depending on which flavour variety you choose.

Back to FAQ'sQ: How do you cook perfect pasta
Answer
There are several ways to cook fresh pasta, they are:
Boil
Ovenbake
Deep fry
Boil
For perfect boiled pasta, you need plenty of salted boiling water.
For every 100g of pasta you need 1 litre of water and between 5-8g of salt.
The salt has to be added when the water is boiling.
When cooking unfilled pasta you need to cook it on high so the pasta will tumble in the water to achieve the optimum texture and prevent it from sticking.
When cooking filled pasta you need to cook the pasta gently to avoid the filling leaking.
Oven bake
For optimum oven baked pasta, cook the pasta according to the pack instructions minus 1 minute. (If you are short of time you can leave this step out.)
Place the pasta in an ovenproof dish and pour over 500g of your chosen sauce. Stir well, sprinkle with some grated cheese and put in a pre-heated oven (180şC, Gas Mark 5) for 20-25 minutes. Stir once or twice during cooking.
Deep-fried pasta
Deep-fried filled pasta is ideal served as a starter or a canapé.
Cook the filled pasta according to the pack instructions.
Coat the cooked pasta in a light batter and then sprinkle with breadcrumbs and deep fry until golden. You can serve this by itself or dipped in a piquant sauce (e.g. Sweet Chilli Dipping Sauce).

Answer
Yes, fresh pasta can be easily frozen, and even better still there is no need to thaw pasta before cooking it. You cook frozen pasta straight from frozen in the same way as fresh (i.e. place pasta in salted boiling water, return to the boil and then cook for time stated on pack).

First of all you need to break the tab and then take off the lid. The tab is there to help stop people tampering with the product.
